Any ideas, what would cause this? Is it a concern?

Couple of things. First your predator tune as it came in a box was not calibrated for CAI and might be set little lean. Check trims value, go to predator site and download a quick program for fine tuning with predator.
Second check what the fan on/off temps are set to with the predator.
Third check for trash accumulated in the radiator, after all the Vette is a fancy vacuum cleaner.

Wow .. those temps are high..
A few other items to check could be
1.) your water pump is not working or is broken.. if this was the case your car would be leaking fluid....
2.) Check to make sure your radiator cap is not done, and working properly, ie the valve or whatever its called thats in the radiator cap is releasing the heat.
Normal, we run that route nearly once a month and on some days I've had the Air Conditioner shut down do to over temp. Remember your at between 4000 and 6000 ft elevation that's were things get touchy. Having your radiator clean and open to air is the key. Your 160 therm and a $1.80 will get you a good cup of coffee at Starbucks.
And make sure there is no air trapped in the cooling system....If there has been make sure to check the t-stat for proper operation. Sometimes they fail for any number of reasons, especially when there is air in the system.
Then try and I bet that is your problem.
I would leave alone if you just have CAI
I have hurricane intake and get that temp on the track running ***** out!
I have the 180 degree themostat too. Check yours to make shure
that it is openiing
I had a predator befor with another vehicle and you it changes the settings of WOT Wide open throttle only. Run lean there and that
can cause heat.
