Ya, there's one in GP off I20 or I30. There's one in north Dallas too, but I think it's kinda small and has mostly imports.
Check the yellow pages, there are 7-8 of them listed in there.

not sure if there are any vette only yards, but there are a zillion junk yards in grand prarie south of I-30 near loop 12 on E Jeffereson Blvd. Go west from loop 12 on E Jefferson Blvd, and youll see them.
