Does anyone have a link to a video or instructions for replacing the headlight dimmer switch on a '81?

Not much to tell. Its down on the bottom left of the column. Two screws, reinstall and adjust. Standing on your head is the hard part.

im talking about the level which controls the directional a as well as acting as a high/low beam dimmer.

You will most likely need only Paper #2. Paper #2 starts with an explanation on how to remove the steering column from the car. I am not sure that you will need to remove it. Carefully "dropping it down" may provide access to the dimmer switch fasteners without completely removing it.

The dimmer switch is attached to the steering column jacket using two of the same fasteners that attach the ignition switch. Paper #2, Page 4 describes replacing the dimmer switch.
