Default Using iPod to Compleatly Bypass Head Unit

QUESTION: Can I run iPod to RCA's that split and go to each one of my amps and simply bypass the head unit altogether. I don't want to put a new head unit in BC I would like to keep the stock appearance, and I don't care to listen to anything thats not on my iPod.

I have just installed a new amp and sub, the equipment I am running consist of the following.

Kenwood 500w\4ch amp (powers all front and rear speakers)
Hifonics 1500w\mono (powers subwoofer)

I am currently running my iPod through the cassette deck to listen to music.

Since the stock stereo (bose) does not have RCA outputs, I had a converter installed to allow for the connection of an amp or amps by RCA's. When I was running this same setup with a much smaller sub and amp, everything worked fine however since I have changed to a bigger amp and sub I am unable to get the amp to push the sub at over about 10%. I am being told that I need a new after market head unit because the RCA converter is broken or not able to run an amp that is so powerful.

I know the amp and sub are fine BC when I plug an iPod directly into the amp input RCA's it will push the sub 100%

Did it, sounds great! Now the only control I have to play with is the iPod.
