I've been reading the sticky's and all information I can on here talking about good places for the ground wire. I'm new to installing new audio equipment. The HU has a black wire, the GM Adapter has a black wire. Don't you just connect the two together? And then where ever the black ground wire is grounded to from the original spot is still in use your just essentially connecting it to the new HU. Right?

It can depend on your setup and what all you're installing, but for a straight head unit replacement then yes, connect black-to-black and you're all set. If you're also installing an amp then it can be a good idea to ground the radio to the same ground as you use for the amp as that can prevent noise due to a ground loop, but for your situation that shouldn't apply.
