A single din radio will fit, and you can add a fancy face plate from HERE if you like. pic 1pic 2 Or just get the $10 plastic adapter.

Get a stealth SUB BOX and find a sub that fits and is a good match to the amp you get. Or you can DIY the box
Front speakers would be 6.5" components on new mounting plates. $150-200 gets some nice speakers.
Sub + fronts can be powered by a 4-channel amp with 1+2 for fronts and 3+4 bridged to sub. $200 gets a pretty decent amp. Make sure of ohm rating of sub if you bridge channels.
If you want rear speakers, get coaxials for about $100, then use a 5-channel amp.

You can't beat DD Mods, Dennis is a bunch of help and has the best packages and equipment. I just ordered a stealth box, Arc 6.5" components and Kenwood 952 single din radio from him. As noted above I am going with the HUmount for mounting the radio.
