There are three parts to the process:

1. Capture to Computer
2. Edit
3. Encode

for 1 I use the Viewcast Osprey 200. It's inexpensive, and a standard in the industry. http://www.viewcast.com/products/osprey/osprey200.html

for 2, I use Adobe Premiere 6.5. Download a copy from Kazaa. If you like it and it works for you buy a copy. Sometimes it's bit much for beginners, if so stick with Windows Movier Maker in windows XP (FREE).

3 is a part of the editing software used in #2, this is where you compress those huge file (2GB+) into 10-20MB. What you select here depends on if you will deliver on DVD or internet.

Start with the Osprey, it's a safe bet. The 200 offers a good set of features. If your camcorder has firewire, think about getting a firewire capture card. But at least for me they haven't worked so hot.
