The other thing that won't hold up is insurance. One misjudgement on the clutch engagement point or some spectator causing you to tap the brakes and your insurance coverage is toast - no seatbelts - over loaded 2 passenger car.
It will probably never happen, but if it does - are you covered? Only your agent knows for sure.

As much as I hate to rain on anyones parade(no pun intended), as a lawyer and former traffic cop, this is a great scenario for a lawsuit if something goes wrong. I've been approached several times about using my '59 this way. I just reply that it's not really safe and actually against the law in Oklahoma. Having said all that I think the notion of running it by your insurance agent would take off some of the heat. If he/she says "no" you have an out. I agree these cars are made for fun, but if somebody gets hurt a jury won't be too sympathetic. (unless it's made of CF members!)
