In changing out the heater hose part so I could put a shut off valve in I opened a can of worms. I got the part out but the threads inside of the intake manifold had been stripped by someone else.
This is a 1/2" female iron pipe size. Do they make heli-coil this big. Anything else that might work?
I did try and tighten in a brass fitting but it still leaks.
Seems like every time I try to fix something on this car I regret it.

I've never used one but they make them. There's always any number of ways to repair threads. That would be my first option. If you can still tighten the fitting I would clean it with carb or brake cleaner and use JB weld to seal it.

Run a tap in the stripped hole and cut the threads a little deeper.
This. Most tap and die sets come with a couple of pipe thread taps that fit automotive applications. run the tap in, and use teflon tape on the plug. And don't go super tight. Just snug.

how deep into the manifold was the fitting, and how bad are the threads?
NPT threads and fittings are slightly conical in cross-section, which allows for cutting the threads in deeper with the same size tap, which results in the fitting going further in.
if you don't have the right size tap or don't have experience with a tap for the type of metal you're cutting, save a potential disaster by having a pro do it. It should be a very quick, easy, and cheap fix.
This is a drive dog I repaired this morning with stripped threads. It has 5/8 20 pitch so I had to order a tap. i threaded the dog to 3/4 16 then I threaded the id of an L9 bolt to 5/8 20 and loctited it in. It should last the rest of my days. They don't make a 5/8 20 heli coil so this is how I repaired it.
I hate to admit it, but I fixed the stripped threads on my 350-365hp aluminum intake by using 3m panel bond. I realize that is a bubba fix, but no leaks thus far and it's not detectable unless you look really close.
