I used 3M Adhesive Remover when I did the '65. I was a real mess of glue and some jute fiber. Spray it on let it sit a bit and then scrape it off. Work in a well ventilated space and perhaps where a respirator if need be. It may take several sprays depending on how thick the glue is. Lots of rags and paper towels also required.

Note the incorrect carpet piece that was in the car when we got it. No rear blower panel.

I used AutoTech "Quick and Easy" and was very pleased with the results. Be sure you have adequate ventilation and a proper mask (for fumes, not just dust).
Maintaining them is cheap compared to anything new. For instance have you priced a starter for a new car versus an older vette? It's the tinkering and upgrading that can run into some serious money. My 5 speed cost me nearly as much as the car did initially.
