I installed a new temp sensor in my '66. It was purchased from a reputable Corvette vendor.
The needle goes up (see photo) to a position that looks to be in the 150-160 degree range.
I checked the temp at the thermostat with my IR gun and it shows 180.
The vendor has no ideas but I know if the gauge reads higher than what it shows now, the engine is running hot.

The gauges aren’t linear. The first mark isn’t necessarily numerically halfway between 100 and 210, you’re in good shape.
As you said, you know where 180 is.
There's another recent thread about the gauge readings vs. actual. In the linked reply from @Surviving 67, you can see that the senders can vary widely to say nothing of how the gauge "sees" the ohms level from the sender.
