I'd be more concerned about intallation,sealing,etc. My original does not leak,but was considering a new one as my original has a few chips.......make sure who does it knows the Vette....

Since it is a fully restored and clean windshield frame,
they will have an easy job. So, my standing over their shoulder
asking Qs and telling them what they are doing wrong ... should make up for the easy install.
Old (original) install was butyl rubber adhesive/sealer.
New installs are almost always urethane adhesive.
For urethane, they should use the rubber blocks to maintain proper height.

you know my first new windshield had a "ripple" in it and then started "flecking" apart on the inside..at first i thought some weld spatter some how got up there but quickly rulled that out, so then i got a new replacement window that was perfect and day two of that window the first day on a highway i got a stone chip from a highway truck.....oh well she is just a driver....
I can't comment on the two brands, but I got a new windshield installed about 4 years ago, and they put in the wrong unit. My original piece was untinted. The new one had a shade (tint) at the top. I didn't bitch right away because I wanted to see if I liked it. I am glad I didn't get it changed....I like it. The biggest problem I used to have with the old windshield was the sun in my eyes, and the new piece with no pits and the shaded upper part really helped. You can't even tell it's the wrong windshield from outside the car (some restorer with a stick up his *** will tell you it's wrong, but we all know about that).
