My 78 Vette's interior was red..... I mean really red!
I really never cared for a completely red interior and am in the process of converting it to black. I have black leather seat covers for my 82 style seats:
I was going to dye the dash and all the trim in black, but had an idea. What if I left the dash and some trim in red, but went with black carpet and paint the steering column black and had the steering wheel re-leathered in black.
Which trim should I leave red and what should I dye black. There is the t-top piece, the windshield pieces and the big piece that goes from side to side just behind the driver/passenger overhead.
i'm still debating that myself with black and creme white...... all my fiberglass molded parts would be creme ...the carpet/seats (for now), rear compartment/interior trim is black....... i'm just afraid that if i do all black and in the cali sun, i will get toasted
I agree paint those seat backs first thing. Then change one piece at a time and look at it drive it and then change something else. Two tone is cool but I think in small amounts. My interior is black I added silver (brushed aluminum) on the dash and console & it looks great.

I was planning to paint the seatbacks. I took this pic the day I bought the leather seat covers, and they are just sitting in the buckets to see what the new covers looked like.
I like your idea of changing the colors one piece at a time to see what it would look like
Someone else mentioned that I should use red only as an accent. Like get the black door panels, but use the red armrests. In my mind, I think that might look cool, but in reality..... well, I am not so sure.
I guess the main thing to me is should I leave the dash red and everything else black. I may try that and I can always dye the dash later if it just does not look good.

I love 2 tone intereriors as well. My favorite new GTO has a red/black interior they call "RED HOT". It's basically black with red seats, red carpet, and red suede on the bottom of the dash and inserts in the door panels.

I have a red interior also, and I am going to go two-tone as well. Thinking black carpet, black upper trim pieces, and two-tone seats, rest staying red.
I changed my interior to black from Oyster by painting the dash black and all the inside top pieces covered in black vinyl, seats and door panels in Leather. I tried the black paint
On the arm rests and center strip between the t-tops but the paint kept coming off so I changed the arm rests to new black and covered all the other parts to vinyl covered.
The only parts left painted are the seat frames and dash.
What I decided to do is to dye the dash black, get black door panels and see what red door pulls/armrests would look like.
The trim around the windshield, T-Top bar and behind, I may leave red for a while, but will probably paint them later. The steering column will be painted black as well as re-wrapping the steering wheel in black leather.
I plan to get black carpet and also paint the seat buckets black. I want to use red only as an accent, but may eventually finish out the entire interior in black before I am finished.
