I bought the Al Knock pieces (seat covers, carpet, door panels) 6 years ago and installed them myself. The seats are leather. It's been awhile, however, I remember it was tedious but not hard. Fitting the door panels took some time to make sure everything lined up. The seat covers were more brawn than brain. The carpet required a little cutting (be sure you have new blades for your utility knife), but if you take your time and fit each piece before you cut, then it works out fine. I used spray adhesive to install the carpet. I ordered some material to insulate the floor and installed some carpet padding to reduce heat and noise.
If the newer sound and heat resistant materials were available then, I did not know about them. I would use the newer stuff if I was doing it now.
If you are thinking about using skins to cover the old door panels or dash pieces I cannot help you. For me the extra time and chance of poor looks (due to my poor workmanship) is not worth it. It took long enough with pieces that were ready to go.
By the way I bought one of those $100 dash caps for the top of the dash. It was easy and looks great.
