I would think that having the doors closed would provide some rigidity to the structure of a vette. Most modern day cars rely on the doors being closed for rigidity.
Don't believe me? Take a small uni-body car and drive up a drive way with a fair incline and you'll hear all the door gaskets moving under the stresses.
I've also heard rumors of the t-tops being damaged from deflection of the body, but that seems pretty severe.
If nothing else, putting up on jackstands would be harder on the body than a hoist -- as I end up doing 1 corner at a time, and that really twists the body
