Did they give you any dyno tables for the engine? If so you should be able to look at that to determin the correct shift points. If they did not give you any I would contact them for the tables.

I have those and that is something I will take a look at as well...But I was more concerned about not blowing up my engine by shooting a piston through the hood.

If it has good components in it and is balanced correctly you have nothing to worry about. I have bounced mine off the rev limiter so many times I can't count. I shift at 6500 and the rev limter is at 7100. If you are concerned about it get a rev limiter. It is cheap insurance against the cost of a new motor.
The red line can easily be determined on the type of cam your running. A Hydraulic cam would red line similar as a stock cam at 5500, a solid lifter cam would be safe to at least 7000 depending on the valve springs.
