I have a set of Dunlop gt qualifiers 25560r15's on stock wheels at the moment and read that the suggested rim width is 7"...Was wondering if I could put them on a 6" width without problems....

Most people run that size on the stock 8" rims without problems. That was a standard size with the factory aluminum wheels on C3s.

6" rims might prevent the tread from laying flat on the road.

7" is the minimum recommended width for that size tire. You may be able to fit in on a 6" wide rim but you'll have premature tire wear and heat buildup that can lead to tire failure and possibly ride and handling issues.

Those should really be on 8" rims. They won't wear right on 6".
