I doubt there would be any performance difference. There is a very significant difference in heat reduction under the hood which translates to heat reduction in the cabin. Also the added benifit of potentially longer lasting headers because of the protection against rust.
Definitely spend the extra money get the ceramic coated. As soon as you see the paint burn and the rust begin showing quickly you'll be kicking yourself.
No difference in performance...the headers are the same outside of the coating. As already said, the coated will hold their appearance far, far longer and less heat.
I'm skeptical about the heat reduction claims. I'd like to see a side by side comparison between painted and ceramic coated pipes on a running engine, point a IR thermometer at them and see some real data.
We have used coated headers for at least the last 10 years on our race cars. We use Swain Tech coatings and it does make a huge difference in radiant heat. It's very easy to feel the difference. Swain uses a much heavier ceramic coating than Jet Hot but is not nearly as pretty.
I think that the extra money spent on getting the ceramic coated headers will be returned in the form of benefits from a good looking engine compartment, and the heat reduction from the coating. A small price increase for the coating will be a long return in the appearance and the heat reduction .
