I can't really give you a quote, but there are tons of vendors.. Easy enough to find out prices from ecklers, covetteamerica, etc.. And all that seems like a pretty simple Saturday job.. Save on 'labor' and do it yourself, probably enjoy the satisfaction of the work you've done.
Fill out your profile so we would know where your located as it varies by state on labor costs.
My advice would be to add up the materials using your favorite vendor and then double that.....that should get you in the ballpark range of what it's going to cost installed.

if you deal with a company like willcox.com you can probably get those components for no more than $1,500 i'm guessing (with other parts as well). maybe not even that much. i know for my '77 with the deluxe panels it's around $1,000. but there's also little things like door handles, consoles, steering wheel, dashes, etc. but i wouldn't think more than $1500 for all that. willcox has great deals IMO on packages. check them out!
as far as labor, do it yourself. haha it may be frustrating at one point, but it's well worth it just to know that you did it. if you try it and can't do it, then take it somewhere. it's not like you can mess it up or anything...
I started out thinking I was going to "keep it simple", then I bought a new dash, switches, latches, steering wheel, seatbelts etc.....it got away from me real quick. I would not be suprised if I had more than $5000 in my interior I stopped counting.......good thing is my interior looks "factory fresh"

console - Wilcox $ 137.00
e-brake cover - Wilcox $57.00 to 66.00 (w/ pwr. win.)
Side trim.....
etc. etc. etc.
That gives you a little idea.
Here's what it looks like when you pull out the dash:
Find a show or find the street rod and hot rod drive-in/cruise-in location in your area...somewhere they get together on a Friday or Saturday night. Check out the interiors and talk to the owners.
I had the same decision to make, and happeded to see a '57 Chevy with an interior that made me drool. I asked the owner, he gave me a phone number, and I got a custom interior with carbon fiber and embroidered tweed in the door panels for ~$1,000.00. Pic sucks
We just had the complete interior replaced in our '64. This was all done custom and included custom seats (including cleaning and painting the frames), door panels, carpet, and molded headliner. They also installed insulation under teh carpet (I supplied), ran my stereo wires under the carpet to the dash and rear compartment from the amp under the passenger seat, and fixed a big hole in the floor. (Bubba had cut an access panel to get at the Hurst linkage from the drivers seat.)
All of this for the outrageous price of $1,845 parts and labor! This is less than Al Knoch wants just for the parts.

I did go back and update my profile. Don't know what happened there, as I had filled it out when I first signed on to the site.
FWIW:
This is my 3rd. The first being a 66 BB Vert that I bought used in 1970 for all of $1,600.00. The second was a 68 BB Vert that I bought for $900.00 in 1972.
I also had some VERY serious muscle cars back then as well. 62 Gran Prix 421, 69 Boss 302 and a sweet 64 GTO.
My daily driver was a 66 Beetle...
Some unbelievable deals back in the first of the gas shortage days...
The bad part?
I sold BOTH of those Vette's in a package deal, summer of 1976. A really big profit since both brought a grand total of $4,500.00...
Even installing new seat foams and covers??? I tried it on a 78 Land Cruiser a couple of years ago, and it was a bear. Finally took them to a local uphostery guy, he did the install for $180. I thought it was worth it. Maybe I gave up too soon!!!
