Paint to match seatcovers?
Do they exist or is my seat telling me it used to be black? There's black shimmering through on a wear spot on the driver's seat.
Might explain why I keep thinking my interior would look awesome in black

Nobody? Allright, let me rephrase my question: if my seats used to be black: how would I best remove the dye? Or just redye?

If you have black showing under another color on seat upholstery -- they have been "dyed". It is sort of like spray paint.
I've not heard of anyone successfully removing vinyl dye -- and another layer might not last too long. Probably worth a try, though.

I don't think you can remove dye either. You will have to re-dye the seats black if you want black seats.
It may just be me, but I would be leery about sitting on dyed seats; with my luck the dye would transfer to my pants, or even worse, my wifes dress. New leather like covers are cheap on ebay.

Well I'll first see if I can get my hands on the proper dye to begin with. It's not easy to find over here.

If they were dyed, you are OK to re-dye them whatever color you want. If they were painted....I think you're out-of-luck. [Don't try to remove the dye; just re-dye over whatever they are now.]

I think paint would have come off a long time ago, so it's probably dye.
Problem is I'm really considering two-toning (doeskin with black accents) the interior. But now I also have to dye doeskin versus only black. More complicated, more tempting to go all black.
