It's unlikely you can get an accurate count without querying the entire nation's list of DMVs for registered '70s, whittled down to convertibles.
Good luck with that. Given the need for confidentiality, that's not gonna happen, nor should it.
Any other guess will be just that, a guess, using a formula of arbitrary percentages and projections that will have little statistical validity.
Many numbers of similar vintage vehicles you read about were arrived at just that way, arbitrarily, and are given too much weight for their relative accuracy.
Even if you could get the information from the different MVA's, I think you'd find that many, if not most, MVA's don't break down models. It would be how many Chevrolet convertibles they have registered, not broken down into Corvettes, Camaro's, etc.
If you look at the corvette black book for 1970 , 17316 total corvettes were built and 4910 of those were 350/350 , so do the math 4910/17316 of the total cars were 350/350.. this comes out to about 28%.
there were 6648 convertibles built and if you appply the same 28% to this, you get approximately 1885 total 350/350 convertibles.
this is of course only an estimate and there are several intangibles that will skew the total.
now how many of those are still registered and on the road? who knows.. some say half of of all corvettes ever built are still on the road..
Given the low production numbers as a base line, it is obvious that there are much fewer 70 convertibles in existence than some people realize. I have asked large corvette dealers this question, and it appears that there are some people who know, but with no high degree of certainty.
therefore we cannot release that information to you !
We even have the exact # of registered cars in every state and country. but without the secert CF password your out of luck !
maybe you can tell us the exact # Chevy trucks still on the road today ?
My 71 was registered as a 'CHEV 2H' in Maryland in 1971. So a person would have to decode the serial number '194371S' to realize it's a 71 Corvette Coupe. It's still registered that way.

It took a year to get her up and running after sitting for over 22 years in
cold storage and a month to clean the paint enough to see what color it
actually was and no, it's not for sale.
