I like studs. If the threaded holes in the manifold are blind, then it's possible to use a bolt that is too long and bottoms out before the head clamps down on the carb flange. I've seen a lot of people with leaks at the base of the carb and they had to add several washers to get it sealed up. Doesn't look too professional in my opinion.
I guess Chevrolet wasn't sure either... 71, 350/270, quadrajet, cast iron manifold.... 2 bolts and 2 studs!?!

There's really nothing wrong with using bolts in an iron manifold, but if you must use bolts in an aluminum manifold, it would be best to have helicoils installed.
Get some ARP stainless studs and never have to be concerned about oxidization/rust....and they look good
