I'm installing new Diamonback redline classics on my '68 this week. For NCRS judging purposes, is there a certain stem I should be using or is it okay to use the stems offered by the tire shop that will mount the tires?

You will need the correct length stem and the correct Dill cap....check your judging sheets. The tire shop should have the correct stem...but I doubt they will have the correct cap. Maybe you have them already?
Thanks all for the info. I'll veryify the caps I have on the Goodyear Eagles that I'll be replacing to see if can reuse.
Alan, not sure yet on when/where I'll judge. I have some add'l work yet (idle solenoid and AIR setup) to bring car up to original specs. Need to get some new rubber on the car as the current Goodyear Eagles are 10+ years old. Lucky that have not had a tread separation issue to date but do not drive it any long miles. I know I'll get dinged points (believe 4) for the Michelins vs. a set of Firestones. The Michelins have 1+ inch in tread width over the Firestones that, to me, better similates the square shoulder of a bias ply tire.

I think you'll take a much bigger hit than that by using a non OEM brand. I don't have my books handy, but think you'll take a 50-60% hit which would be 8-10 points.
