'75 to '69
Reason being, I like the looks of the bumper cars, and it would cost a lot less to get a replacement '69 body and bumpers, than it would to buy a '69 naturale.

A good used 69 nose will set you back $3,500, maybe more. A rear clip (without bumpers, brackets, etc.) about $500. The frame would need to be modified front and rear, to except the bumper brackets, probably another $500 in parts (crossmembers, etc.). None of these numbers include the cost of labor, to do the conversion. If your 75 nose is stock and in good shape, you can sell it for about $1,500, which would reduce the cost of the project.
When your done, you'd still just have a modified 75, not a 69! I doubt that you could ever get back what you put into the car, especially when compared to what you could sell a "real" 69 for.
But yes, your doors will work. All 69-77 coupe doors are the same.
I don't believe your estimate includes all the brackets, grills, lights and hardware you'll need too. Your 'total' cost isn't very complete.

Although 'resale' may not be a factor now, I'll bet it will be someday.
Your 75 headlights won't work in a 69 nose without changing the supports, they're $235 each (and you won't find them used). The hoods are different, your 75 hood won't line up with the 69 fenders, where they meet the windshield. The radiator core support, radiator, shroud, inner fenders, bumper brackets and mounting location, 3 grilles (about $75ea.), parking lamps ($76ea), lower grille moldings ($160ea), side marker lamps (33ea), front spoiler, lower valance panel and the plenom panels that seal the nose to the cowl, are all different on a 69 (and I probably missed a few parts). You may be able to reuse the core support, radiator and shroud, and could probably modify the inner skirts to work, but everything else on that list would have to be replaced. That's why I suggested a complete used nose. With a used nose you will get almost everything that's different on a 69, and needed.
The situation at the rear is similar. That $900 clip is just the glass. Besides the clip and the bumpers, you'll need the brackets, tail lamp lenses and housings, rear side marker lamps, rear exhaust panel, exhaust bezels, exhaust tips, and 69 mufflers, too.
I'm not trying to pick a fight with you. You asked if it could be done, yes it can. You said it would be cheaper to convert your 75 to a 69, and I'm not so sure. When you factor in all that is different about a 69, and the labor needed to make the changes, it will cost a lot more than you think. If you wanted to do this conversion, it would be cheaper and easier with a used nose and clip, than trying to assemble it with new pieces.
