I just converted from points to a pertronix ignition. For the most part, it runs great and I do see a slight increase in performance, not much, but it's there. My question is, Do I, should I, make changes to the spark plugs and or plug wires? Hotter, cooler, more gap, less gap, etc?
It's a stock 73, L48 auto, street driving only.

Nope....you do not need to do a thing. If it ain't broke don't fix it!
Now, if you want to spend the monies on new plug's, wire's etc.....knock yourself out....but I would wait till its tune-up time....and if its tune up time now....well its time for at least new plugs...wires really do not tend to go bad per say....if they are very old....it never hurts to replace them.
If, you wanted to create a baseline for yourself (date of last tune).....Replace the wires, plug's to factory spec....and know that your car is in tune!

If you installed the Pertronix Ignitor coil, also, you could increase plug gap to .040-.045" since you have a higher coil output voltage. {You don't have to...or need to...but you can.}
