Did these come with all coupes? Were they typically match color to interior or exterior? Types of fabric stock, and aftermarket? Also where and how much will they cost? I found a set of blue vinyl ones on ebay and I have been meaning to get some for instances where I might be out and need them back on at some point.
All coupes came with them, most times in the same colour as the interior but frequently black Naugahyde was substituted. Original ones will have a date code inside.
Hmm so if I can get some for less than $40 I should go for it
Also once in the bags and stacked on top of each other in the bag should they ride fine? It looks like there were some sort of straps for bags available as well.

All coupes came with them. I've never seen an original set in any color other than black.
Original ones were a grained vinyl, basically the same as the seat material. GM ones were held closed by 3 evenly spaced chrome snaps, while repro ones use Vecro to close them. The inside of the bags usually had an ink stamp repeating across it, which included a date (month and year) and a makers logo. Often the date and logo is worn off or to faded to see, on original bags.
To the best of my knowledge, the only color keyed bags that GM ever used, were the ones designed to store the 80-82 removable t-top carrier.
Below are a couple pictures of an original bag. It may not be to easy to see, but the final picture is the remnants of one of the various logos found in OEM bags.

I don't believe they were "stacked on top of each other" I think they layed on an angle next to each other. If I can find a diagram or picture I will post it. By the way my interior is dark saddle but my T-top bags (which are original) are black vinyl.

Okay. Maybe my bad. I thought they were color keyed to the interior. They are blue in my 80 and it has a blue interior. They do not appear to have been dyed blue by a PO. Roof panel carrier bag is also blue.

They matched the interior color from the factory. When they ran out of a color they then used black. My buddies 69 lemans Blue with bright blue has his original Blue bags.
I think the ones that came from the factory were black [only]. You can get them in colors from the aftermarket vendors.
I have a 69 and the interior is bright blue and the bags match. The bags are original GM bags.
Also they fasten by velcro strips and around October 69 they went to the chrome snaps(3)
