Chrome plating aluminum rocker panels would be incredibly expensive and any flexing of the panel would cause the chrome to crack. It is probably better to have them powder coated a chrome [paint] color.
4yrs ago when I purchased my '80, both moldings were chromed.
I finished the look by buying the plastic chrome grills for the vendors to finish/match the look.
When the vette is freshly washed and waxed, those items are very noticable
So my brother looked into it and can't find anything.
He got a rediculous price to have them chromed. It was close to $800 for the pair

The rocker panels are anodized. That is a hard coating that is put on the surface (kind of like a plating technique) because anodize is hard and acts as a wear/abrasion resistant to rocks & road rash. You can't "polish" the aluminum because it is beneath the anodized surface. You can sand/blast away the anodize to get at the aluminum to polish it...but then you just have a soft aluminum panel that will look like sh!+ after a couple of weeks being on the road. I strongly advise against removing the anodized layer. But, you still can paint it....
