I have a 78 corvette. Got rid of my cats and heat riser so far. Next up is the air pump and EGR (and whatever else you guys recommend)
Is there a good tutorial out there for what specifically to remove, and how much plugs/wires to remove and what to plug each hole/wire/plugs with?
Would like to pick up my needed parts ahead of time to simplify the project and read a tutorial or photo walk thru ahead of time so I am more familiar with the project.

Not entirely true, though the OP talks about "Cats" plural as if there were more than one, removal of the original pellet style pancake cat can indeed show a significant gain over the factory setup. Of course the same gain would be had if that original cat was replaced with a new high flow monolithic one as well.

Maybe, maybe not, the May 1978 issue of Hot Rod reported that when GM was putting together the pace cars for indy they found that on car #0002 that the biggest boost of hp came from removing the catalytic convertor, it was worth 20hp. just short of 10%. Other changes were made to #0002 but none added up to more than that one change.
Car#0001 was the actual pace car used in the race and 0002 was the modified mule vehicle.
Of course these cars are now much older and the improvement is likely to be less since its not combined with the other changes that were done to the mule car, but it not unreasonable to assume that the change could be felt.
still overall your point is right on the money, there is usually nothing but looks to be gained when eliminating emissions componants.

i know it wont give me any HP gain. the air pump squeels and drives me nuts. Would rather get rid of it along with other stuff to clean up the engine bay a little.

There is no walkthrough that I'm aware of, for the most part its pretty straightforward. Think of this as an opportunity to put together the walkthrough and then post it up for the forums consumption. So long as you are not labroing under the misapprehension that there is all sorts of power to be found there (many do so labor) then you are going in with your eyes open.
On the other hand Vettebuyer has shown how a correctly equipped car can still be attractive.
