I would not think that peel-off adhesive would stay attached on a [hot] valve cover. It's worth trying first....as long as it doesn't fall off on the road, somewhere.
If the emblem has posts [threaded or unthreaded], drill matching holes in the valve cover and put nuts [or speed-nuts] on them to retain it well. If no posts, you can use JB Weld 2-part [tube] epoxy to attach them permanently.

I have the same concern about using a glue or adhesive with the high engine temps. It would seem as if the glue would begin to melt, and the emblem would come off. I dont know what GM used to hold this on, but it had to be some type of high temp industrial adhesive.
