Forget the Edelbrock carbs They make nice intake manifolds but for carbs I would go with the Holley. Easier to work on, superior performance and reliability.
I'd prefer a Holley over an Edelbrock carb any day.
If you could get Vic to pull the airboxes off the motors of that fleet of Mustangs,Corvettes, and Camaros that he brings to the races you would see Holley carbs sitting atop each motor....ESPECIALLY at the racetrack Holleys' ease of tuning vs. any other carburetor makes them the obvious choice.
A good running Holley is worth the money. But the key is good running and well tuned to the engine. If you are in cold weather area the Edelbrock has a pretty good choke system and holds during the warmup. I have run both and the Holley seems to come off choke too quick and these old vettes are cold blooded. Hard call, money, your ability to tune etc.

I have heard that.
Also Turn over an Edelbrock air cleaner and put on your reading glasses and read the small sticker that says 'made in china"
I had the 600 endurshine carb on my car and it was no problems. I just had a bunch of motor work done and now have the 800, it looks beautiful and gives me no problems. I know hot rod guys like Holley because they are easy to adjust at the track. I dont bring my car to the track,so Ill cast a vote for elelbrock.
