Red means it's rare or medium rare. 'Blue' for some reason means that the diner wants his meat raw or just slightly seared .

Your choice.

Hi pdb,

The red ribbon is awarded to NCRS Second Flight Award cars. It's an indication of a very nice car and often means that with very little work or $ it could be a Top Flight car.
Top Flight... Blue Ribbon...a score of 94% and above.
Second Flight... Red Ribbon... a score of 85.0% through 93.9%
Third Flight... White Ribbon (?)... a score of 75.0% through 84.9%
The awards are based on a total possible 4500 points.
The cars are Flight Judged at 3 levels Chapter (local), Regional, and National. The cars that achieve their awards at the the Regional and National levels are often held in higher esteem than those judged at the Chapter level.
Regards,
Alan
