I did the same search a few years ago and could not find the original
80 series spares available. I found that a 205 75 15 tire will mount
on the original spare wheel and fit in the spare tire compartment
without having to lengthen the latching bolt.
This size is also very close in height to the original size tires on the
car, that is 255 60 15.

probably not, but its the OE spare size for those that are numbers and everything else correct....A never on the ground spare tire.........{NOS}......
BTW, the rim size for a 1968 is 15X7 and 15X8 for all the rest
Here's another approach. I went to the local salvage yard here and picked up a Corvette mag, bolt pattern the same, for about $28. Great tire and fits just fine. I wanted a little more than just the spare. I took it home, cleaned it up and it's perfect. I took the original SPARE tire & rim to my local MR Tire first. THey says that they were not allowed to replace the tire on the rim that was marked SPARE TIRE USE ONLY. Not sure I believed them, but I am happy with my spare and how I will never use it anyway! It's there for looks & Safety.
I had the same problem with my original spare tire, so change for the 235/60 R15 that are the same of my car right now and no problem fit in it in the tube.
also consider if you do not have a equal height spare tire that is the same height as your other tires and you put it on your rear, you will quickly eat up your posi clutch packs.

This is exactly my concern. I have been on Tirerack looking at the details on the specs to match revolutions per mile with my current tires.
