The 68 I have I want to keep it as original as possible, The numbers do match. It still has original paint, original 7" wheels, original spare! It even has some original hoses (hard as a rock) that must be replaced, Top is original but must be replaced... etc. so how far do you take it.
If I'm buying a car, it would depend on why I'm buying. I love many "resto-mods" I like the creativity some people put in their cars, I try to keep my cars "stock appearing".
So kind of comes down to "dealers choice" not everyone has same opinion... as that is what makes this hobby so fun.
If I had a 1980, I would likely pull the motor, slide in a small block 427, a 5 speed, paint it black and drive the crap out of it - with little concern for value - because I would be loving how she runs.
If I had a 1969 427 Tri-power car - there is no way that I would cut this up. I would restore it to NCRS spec's and love it - and watch the value grow - as it was a work of art when it left the factory.

I'll go on a limb and venture that to a person, we all enjoy driving these cars. Some of us prefer to extend the original design engineer limits or replace them altogether while others delight in Chevrolet's factory image, as is. Guys like Easy Mike, Alan 71, and gq82 help maintain the original structure of the hobby so that we all have a baseline to refer to. We should have standards while in association with those of us who choose to hot-rod, resto-mod, or change whatever one decides to change.
In either case, I believe it's done to soothe whatever beast drives (sic) you.

To the OP, unless and until I can purchase a chrome bumper unit of documented pedigree, I'll enjoy a blend of stock appearing and calculated changes on my current mongrel to improve my driving experiences.

And to add, I enjoy knowing my '68 BB had a history, and was driven enough to need a rebuild, and the PO had the desire to add the aluminum heads means he cared about performance. Whjen I see a low mileage, numbers matching "survivor", it says to me nobody ever drove and enjoyed it much.
