Anyone have a guide how to take it out. And is it the whole piece or just a pumpkin.

You can do it either way.........how small are your hands ? and how old are your rear bushings ?
Some can get their hands behind the batwing to take out the pumpkin bolts, other of us with big mitts take out the batwing and pumpkin together for easier access.

Either way you are unbolting the fiberglass trans-spring on each end, disconnecting the driveshaft from the diff, and the halfshafts from the trailing arms - then you either drop the batwing assembly or just the diff from the batwing and you're done

The GM Shop Manual for 1981 has detailed instructions. Section 4B.
