Many years ago while painting my door jams, I got some overspray on some interior parts, mainly center console. What do you suggest to remove? Paint was single stage paint with hardner added. Red paint on black interior.

I've heard that oven cleaner could help with this problem, but I've never needed to use it. Probably worth a try, if you can get the paint off without hurting the surface of the interior panel. Test it on an area that isn't readily visible, first. This assumes that you will be removing the panel...I wouldn't want to use oven cleaner inside the car!
I've used oven cleaner to strip model cars as well. Probably the first thing I'd try is some rubbing compound, ie the sort you'd cut and polish the car with. And given how clean vinyl has to be for SEM, etc to stick, you'd think it should come away easily. My NZ$00.02
I cleaned metallic blue paint off the console and door trim of my 300ZX using oven cleaner. The whole thing was painted! Doesn't harm plastic, but attacks the paint. I can't remember what brand, sorry, and if I could, there's a good chance it may not be available in the USA. Some model car forum guys might be able to help. That's where I got the tip from in the first place!
Having used oven cleaner in the past to remove lettering enamel off of vehicles, it is extremely aggressive, try it first in an area that is hidden or on another piece that you don't need. I've eaten into factory finishes and trim on vehicles back in the day. Also tape off areas you don't want stripped, it drips and leaves run marks.
has anyone had any luck removing the dye/paint from parts that were previously another color? Have dark saddle that a few of the pieces were painted red. Can you remove this or do you need to redo them with new dye/paint?

I've removed successfully with denatured alcohol. Worth a try before you bring out the heavy duty stuff
Some tape did not stick to my red tail light, and so the lens has come gray DuPont Nason primer on it....not heavy, just splatter...but I found troubles getting it off.....

There is a product called Stoko Cupran. It is a hand cleaner for paint and is solvent free. It can be used to remove paint from tools as well as your hands. I have not tried it on something that has had paint on it a long time, but I have used it to remove dried paint from my hands as well as tools and it has worked incredibly well. It shouldn't scratch the lens b/c the scrubbers, I believe, are walnut shells. You may want to try this. I'm going to try it on one of my parts where I have a similar issue.
