So the passenger seat allows an adjustment to move the seat forward and backward to the dash but is there an adjustment to the pitch. Always get a complaint from the wife about that she is laying down. Any options?

Cars came with a set of 'shims' in a small cloth bag that were to be placed under the seat back bumpers in order to 'decrease' the rake of the seat back.
Also make sure the bumpers are there. Sometimes people have removed them to 'increase' the rake for taller drivers and passengers.

Alan... the 79's didn't have bumpers on the back of the seats. I guessing you could put shims under the back mounting bolts to raise the back of the seat up a little.
There was supposed to be some adjustment in the seat back hinges on the side. The three screws in the side could be loosened and then the seat slightly adjusted. But if I remember right with my '79, that "adjustment" was more hopeful than actual.
You might be able to figure something out with the hinge to prevent it from going so far back, like adding a stop in so it only goes so far.

On my 1979 I used a small towel rolled up and placed between the back and bottom
This is what I did to alleviate this condition; I welded a small piece of steel in between the hinge openings. Be aware that if you decide to go down this route that you will also need to modify the gear tooth which engages the inertia mechanism. See the pictures for a better idea. You can also add some sort of spacer underneath the rear seat track mounting holes; this will raise up the rear portion of the seat and decrease the angle. If your passenger is very tall, this option may not work out for you.
