I've finally got my car back from paint and now I'm thinking about some new rims. I don't want to modify anything or have any rubbing, so let me know if this combo seems like it will work with no issues. I'm looking at the Foose legend black 17x7 with Firestone fire hawk wide oval 235/55r17. Thanks for any input.
Why do you want to go with wheels that are not as wide as stock? There are so many wheel choices. You can't find anything that you like in your price range that's 8" wide?

Don't stop @ 17" there are plenty 18" x 8 or 17x8 that fit your car.
All you need is 4" backspace (-12mm offset) to match stock 8" wheel.

Found these rims for what I think is a good price and the tires I listed are only .3 narrower than the stock which I didn't think would be noticeable. Will there be a big difference in appearance with the 7" wheel. I forgot to say that the wheels have 4" backset.

Wrong Backspace for a 7" rim. Your wheel will be 1" inward. This will look funny. You would need a -12mm offset which would be a 3.5 " back space for a 7" rim. This still will be 1/2" inward and provide additional clearence on the inner side of 1/2".
To have a 7" Rim and have the outer tire the same as a stock 8" wheel you need a 7" rim with -24mm offset and 3" backspace.
I did a drawing so that I could understand it better and this is what I came up with. If the tire specs I got were correct it will be in about 5/8". Can I put a 1/2 spacer or are the bolts not long enough. If not I guess I need to find different rims.

Ok what you are showing is correct expect they are showing 7" and 6" rim. eg a 15x8 wheel is actually 9" outer lip to outer lip. Your picture doesn't show the wheel lip properly. When you measure backspace its to the outer lip. Offset is a measurement from the center of the wheel to the mounting plate.
so for example the stock YJ8 C3 Aluminnum wheel specd @ 15x8 rim is actually 9" for the center line measure 4.5" to both lip edges. So for a offset of -12mm meaning 4.25" from the outer lip edge. Minus 1/2 lip of 25mm ( one side ) give us ~ 4" backspace.
offset is measured from the center of the rim to the backside of the bolting plate. Backspace is measured from the bolting plate to the outside edge of the RIM. What makes it confusing is that a 15x8 wheel with 0 offset ( centered in the rim ) is not a 4" backspace. That because lip to lip it is ~ 9".
