I bought a '78 with Oyster leather interior from the original owner.
He removed the complete seat set from the car in '79 and has stored the seats ever since. What is the best / safest product to treat and protect the original [ like new ] skins ?
FYI, in 78 the seating surface is leather, and the side bolsters are vinyl. Unless the owner had them redone with all leather.
They would be the original leather / vinyl.
He didn't like the seats, so he made his GM dealer, put in new Pace Car style /'79 style seats . He saved every bit of documentation and correspondence on the car......in addition to keeping the original complete seat assembly with [ tracks, foam and skins].
For regular cleaning you need nothing but two microfiber towels--one damp and the other dry. First, use a few drops of dish detergent to a spray bottle full of water for dirty leather.
I know others will disagree saddle soap isn't particularly good on saddles and definitely shouldn't be used on automotive leather upholstery. Other traditional leather care products like mink oil and neatsfoot oil aren't the best either.

For old, dry or very dirty leather I suggest Leatherique Rejuvenator Oil followed by Leatherique Prestine Clean. Both excellent and perform as described. Autogeek (one of our sponsors) sells Leatherique products. With regular basic cleaning the Rejuvenator Oil lasts indefinitely and unless your car sees lots of use once or twice a year with Prestine Clean is all you need to keep the leather in top condition.
