Looking at the stamps on my inlet manifold - the Date is "D 7 8", which I assume is April 07, 1978? Looking at the casting number on the inlet manifold, it is "346249", which looking up says it's from a 300/350/400 engine.
So, obviously the block is from a 327, but the inlet manifold etc. have been updated. Would I assume it's therefore off a '77 / '78 350 Engine and the 327 has been upgraded to a 350 when rebuilt?
Is there anywhere else to check new components / parts without pulling it apart? :P

I wouldn't assume that at all. More likely it's still a basic 327 with a 78 4bbl intake on it, and aftermarket valve covers.

A "lumpy" idle would indicate a big cam, but no, there's really no way of knowing what's inside an engine with tearing it down.
