So, I won't be replacing the vacuum lines for a couple months. Is it ok to manually prop up the lights to drive around at night? I'd only be doing it once in awhile. Thanks!

What do you mean by "unplugging the vacuum"? For the headlamps? For the whole car?
If you want to leave the remainder of the vacuum system operational, just remove the vacuum hoses from the middle port on each of the headlamp vacuum relays. Cap off the fitting on the relays (to keep dirt and moisture out) and seal/plug the end of those hoses which you removed. If you do this AFTER you have raised the headlamps, they will remain in the UP position; but the remainder of the vacuum system will operate normally.
