Hey Dalton - I ended up having a wooden block made by a local cabinet maker. Not my original plan, but after talking with the owner of the shop (who also happens to be a car guy - he's building a '60 Chevy panel with a 396 transplant), he felt that using wood for the block wouldn't be an issue.

Since I had the clutch pedal out of the car, it was pretty easy for him to work with, and it turned out great. He mounted it with screws through the back of the pedal and glued the new pedal pad on the block for me. Ended up being $100 - reasonable for the project I thought. Painted it black and it's ready to go back in the car.
