Well there you go. Buff away! (carefully). You might want to find someone who 'knows' what they're doing rather than do it yourself....and potentially screw it up. I'm not talking about the guy down the street who thinks it's the same as putting wax down. I'd take it to a shop that does a lot of classic cars and has good guys you can trust. It's probably going to take a day to do.
If you get thier "best" job may run you 3k. Screw paying 15-20k for a driver
last time I checked they will use their own paint usually single stage..its hard as a friggin rock.
Talk to the mgr be realistic, as said there are good and bad ones.
A good cut and buff job can make an avg paint job look outstanding.
Laying color is the easiest part of a paint job. I had 240+ hours of prep work in another fiberglass car I own. Final spraying took only about 2 hours.
Orange peel management is about proper thinning and how hot the hardener is so the paint can flow before curing.
After getting ridiculous $ quotes from body shops I ended up doing it all in my garage myself. Watched some youtube vids and practiced on some junk I had laying around. Used urethane 2 stage. Color coat went on without issue. Clear did have some minor orange peel and "trash' in it but that is why you lay down 3 coats of clear so you can cut one off to make perfect.

I did the exact same thing. Bought all my supplies locally and painted ot myself. Color laid down perfectly, the clear laid down with plenty of orange peel. Spent the weekend wet sanding and buffing.
I went to my local Maaco on Black Friday , day after aThanks Giving as they had a half off price sale. Picked out the type of paint job I wanted , gave them the cash . Went home and prepped the car for paint. Took the car in 2 months later . The manager stated it would be 3-4 days , he called the next morning , said come and get it, It was done. I was very pleased with the paint job and would use them again. That being said , as mentioned in a above post not all Maacos have the same painter so results will very. After Googling Maaco paint jobs , I masked off what I didn't want overspray on like the rear end area and behind the grill. Glad I did that as there was a lot of overspray on the plastic sheeting. I let them mask everything else and the did a perfect job.
Although I have not used Maaco for my personal vehicles the shop I work for has nearly 100 red vans and Maaco paints every one.
They do a fantastic job and the trucks take a beating but the paint never falls off or chips away. They do a much better job than Ford, that I can say with 100% certainty.

Wow - I gotta tell you that those 69/70 Mustang fastbacks are some eye catching cars. Love them and the chrome bumper C3s - only later did I find out SHinoda had a hand in both designs.
