For this ‘79 oil pressure sensor connector, would it be possible to buy just that black plastic part or will I have to buy the plastic part already connected to the wire?
If you can't purchase that from LectricLimited, I doubt that it is produced in the aftermarket. You may have to refurbish that one (clean up the boot and put new wire in it) or one you can find at a junk yard.
plastic it is not. it's a rubber boot. I have found them for other areas like the alternator wire. perhaps check the corvette suppliers. and look for a "Boot" not a plastic part.
