Looking at an 82 with 93,000 miles, an 89 with 16,000 with z-51 and a 2000 with 64,000. All have clean titles and no carfax problems. Is one better or one to stay away from?

I'd go with the 2000, it being a C5. The seats in the C4 are a bit narrow for me. The 89 was the first year for the FX3 suspension and Getrag MN6 6 speed trans. Other than the seats it was a great car. Power on the C5 is about 100 more than the C4.

The C-5 is great car...completely digital. If I was going to buy a C-5 then 2004 is the year to get.
The 82 is mostly analog...once you've determined that the ECM is working then the system is very reliable.
I'd bag the C-4 completely...unless you want to build a cheap track-day car.

You didn't mention options or your preferences like color, convertible vs coupe, auto vs 6 sp (excluding the '82 coupe, auto only). Each of these years have unique characteristics. I have a C3 and a C4 and aI have to say the C4 is a faster and better handling car than my C3. If all things being equal, i.e. price, condition, options, then drive them all and ***** the one that you have the most enjoyment.
