I want to go to 255/60/15 for the rears. How do I achieve a deeper dish appearance? Would I need two wider rimmed rally wheels for the rear? Like 8.5 wide? Then how does backspacing work? Thanks for any advice

to achieve a deeper dish with a wider rim the backspace would remain the same as it is now. so as the wheel width is increased all of the at increase is on the outside of the wheel. corvettes like a 4 inch backspace to not hit a stock design trailing arm. I do not know the different width of rally wheels available and if they made them wider than 8 inches so I cant add to that part of the question.
But there is 2 parts to a wheel design and they tend to rely on each other depending on which you are starting with as a factor. Backspace and offset. given a particular backspacing, it will determine the offset from the center of the rim that the flange surface is. Offset can be seen as the deep dish and it will tell you the backspacing. You can go with a deep offset and a shallow back space but expect the rim to stick out past the fender. My turbines have about a 3.5 inch back space so they stickout past the rear fender, not so much on the front but the tire swing increased so the tire contacted the front and rear of the wheel well.
So you can also look for an 8 inch wheel with a shallow backspace and bigger offsset
You can buy repro rally wheels in any size you want from Summit Racing, also with custom backspacing. They're reasonably priced, as well. I bought 2 about 10 years ago for $77 each.
