A lot of heat can come from the parking brake and shifter area so you might want to go there with the leftover stuff.
There should be a lower shifter boot, make sure it's good.

This is something I am considering, as much to reduce heat than noise. But, I don't want to spoil (and certainly not replace!) my nice, original carpets. Are the carpets stuck down, or just held in around the edges? If I can remove a side at a time carefully than I may look more seriously at some heat/sound deadening.....
Now,I have some left over so where are you installing it on the doors,I’m assuming between the door panel and door.and working around all the holes.
On the door and as you mentioned, leave an opening for the hardware, linkage, drain holes and the lower access panel. A roller makes the job a whole lot easier.
i did the whole interior from top to bottom an front to back with kilmat and xmat from eastwood it has a added layer of closed cell foam. when i did the dual exhaust inside the car was like an echo chamber. now it’s nice an quiet. and a roller is recommended for proper insulation and was a huge help for me.
The sound proofing makes SUCH a difference. I just took mine for a drive after recently installing soundproofing. What a difference. Totally worth the effort!
