Removing paint
The car was wrapped when I purchased it, and I guess before they wrapped, it was primed. Original color was Green. My goal is to remove as many layers as needed in order to paint. I removed the wrap, and now I'm trying to remove the paint with a marine paint stripper, I'm just not sure how much I need to remove. See the attached image of the t-top. The top layer gray primer I guess was added before wrapping, so that needs to go. Underneath is the green which really removes easily with the gray. Underneath it, there's black, then beige, then gray -- what are all these layers, and what should I remove before I re-prime/sand/re-paint? Would prefer not to get down to the fiberglass, unless really necessary. What do you think?

Chemical strippers today lack the methylene chloride that was the principle component of a good stripper. Alas, they are no longer available, due to government regulations. You are far better off with your mess by getting a heat gun and razor blades. Watch some videos to get familiar with the process.
I used an orbital sander with 80 grit paper. I sanded through layers to where the original paint sanded through visibly like a guide
I then used “Morton’s Eliminator”.
Morton’s is still available through Summit racing.
