I would just put a battery disconnect switch in the car and have it hidden somewhere and use one of those little steering wheel lock things, if it's a manual that's already a pretty effective theft deterrent

A clutch pedal might help. If you have 4-speed that is properly adjusted to act as a theft deterrent, there's a way that you can get the transmission into two gears at once. Then the tow truck will need skids to steal your car. It probably works better than private security, but isn't foolproof.
