That is a VERY nice system. If I were to purchase an aftermarket fuel injection system the Mass-Flo would be high on my list.
However, as much as I would like to put an aftermarket F.I. system on my current engine, the cost is too close to that of a used, complete LS1 engine.
i know this has got to be a stupid question, but does the laptop have to stay hooked up the whole time?
Nope. The laptop is only needed when doing changes to the tuning or when you want to log/monitor what the EFI is doing. During normal driving the laptop is not needed.
Have any of you guys looked into the Megasquirt system? I will be putting mine in later this year. Megasquirt is the result of mainly two guys. They have done all the work, and they share it for free. It cost me less than $300 for the whole computer. Granted, this was for the pieces, and it had to be soldered together, but there are people who are willing to do that for you for a total price of about $350. Even better, these same two guys, and hundreds of others, are constantly improving on the system. For instance, someone wrote code that allows you to tune the system with a Palm Pilot. Someone else wrote the code to control distributorless ignition, which I will be running.
This is not a simple bolt on, but it's not hard either. You need to buy and mount the sensors, throttle body, and fuel pump. The sensors are all basic GM stuff you can find at the junk yard or the auto parts store. There are a couple message boards as well for help.

2. DO NOT try to go small on your inner diameter on the fuel lines. Stock fuel lines WILL not work. They are not big enough to pass adequte fuel pressure. I tried to squeak by by just 1/8 inch smaller than required. It would break up (fuel starvation) at 3200 rpm
