I converted from Auto to Muncie 4 speed this winter.
The pedels are the hardest part of the conversion, but you can do it. There are plenty of threads from very knowledgeable vette owners on this forum. I suggest you search them and start reading.

YES!!! ITS WORTH ALL THE TROUBLE...
Last year I put in a TCI SIZZLER automatic & torque converter. And I Liked it a lot.
Then I went to the 4 speed I doubled the FUN FACTOR! Its Great!!!
DO IT, you will be wondering about it while your working on it but once you start driving its all worth it!
I know that this isn't a possibility for a lot of folks, but for my $0.02, have you considered a second "fun" car? I've converted a LOT of things over the years. I finally came to grips with just how much money I've dumped into these little conversions. Not even factoring the aggrivation into the equation, I finally figured out that having more than one toy-car was what paved my road to satisfaction.
I have one with an auto and a few more with manual transmissions. C-4's prices are in the toilet. I'd consider keeping your C3 in auto-configuration and look for a decent C4 (or C3 if that's your pleasure) with a stick.
I know this doesn't specifically answer your question, but it's just something else to consider.
And, yes, the pedals are just a bolt-in affair. Just finding them though can be a long life experience unless you're willing to cough up your life savings.
